It is one of the most popular cuisines of Nepal, especially in Kathmandu. Newa Cuisine is a traditional way of cooking passed down from generation to generation. Newari cuisine is mostly popular for its varieties of buff meat from choilla to Dya kaula (Long boiled buff). The amazing fact is, not even a single part of buffalo goesn’t go waste besides hair, nails, and horns. It’s also interesting to know that even there is a dish for the eye and tail of buffalo.
